Tasty lettuce can be eaten as soon as it is big enough. Lettuce can be planted as soon as the soil can be worked. Cover seeds lightly, about 1/8 inch and firm soil gently in rows 12 to 18 inches apart. Thin seedlings to 6 to 8 inches apart. The seedlings removed may be transplanted or eaten.  Cutting every other plant at ground level gives the remaining plants more space for growth.
